Pistachio Lovers’ Pound Cake

This is a rich, dense pound cake that isn’t too sweet. I love that there are ground pistachios in the batter. I’ve used ground almonds in batters before, but never pistachios.

The addition of honey to the cake and the glaze plays well with the nuttiness of the pistachios. I used blueberry honey, which is a little on the sweet side. I have to say, pound cake is my favorite type of cake, hands-down.

      Thanks! Yeah… I would never have used a pink background before the class. Definitely divergent from my many previous photos; mainly used different placemats before.
