Chocolate Mint Thumbprints

I made these cookies for Larry to bring to a community meeting. I wasn’t sure about them at first – the filling is extremely minty, but when paired with the subtle mint chocolate cookie, it just works.

The other thing I love about these cookies is that they’re adorable. I used Green & Black’s mint chocolate for the cookie and Amano white chocolate for the filling. Andes mints could be used for the cookie but I think I liked the more moderate flavor of the bar. I love how they’re rolled in raw sugar before baking.     These would be a great cookie to take to a gathering. I’m going to try them with the Green & Black mint chocolate next time. Rolling them in sugar and making the indentations was fun.

    Terrific! I agree – the filling by itself is questionable, but paired with the cookie – it’s just right. Nicely done!

    I love the crunch of the decorating sugar on these cookies…I usually leave all the crunchy sugars to the kids, but I liked it on these. They look extra special without tons of effort…I think they will be great Christmas cookies.

    Pretty cookies! The crunch from the sugar is my favorite part! I’ve never tried a Green & Black’s mint chocolate bar, but now I’m going to have to track one down… It’s hard for me to resist mint and chocolate together!
