Millet & Cheddar Polenta with Roasted Vegetables

This is a great flexitarian dish. The millet polenta is substantial enough to be a vegetarian main. I almost added some black beans for additional protein on the side but didn’t, only because I wasn’t that hungry. I had a couple of bites of Larry’s steak, and it was excellent. We hadn’t tried this local producer before and will happily buy from them again. We both really loved the polenta.
