Grilled Tomato, Smoked Turkey, and Muenster Sandwiches

Tonight was quick sandwiches with the panini machine. It included a spread which was a mixture of fresh thyme, diced red onion, Dijon mustard and fat free sour cream. I don't use fat free sour cream, so I used regular. I liked the sandwiches fine, but Larry thought the spread was weird. He made a second sandwich using just regular mayo, and it was much better. Larry has an excellent sandwich instinct.

Katie, you don't need a fancy-schmancy pannini press to make a fabulous sandwich. Wrap a brick in foil and put it on top of the sandwich on a grill pan or cast iron skillet.

Yeah, but then you don't get the nice grill lines. I'll just have Sheri feed me if I want them that badly!!

really? on both sides? Amy you are so smart....you really like bricks, don't you? Is ther anything else you can do with them aside from paninis and chicken?

You can build a retaining wall with bricks.

I fought Larry for two years to get that panini grill. If he sees me making them with bricks I'm in BIG trouble. :)

Well, now that we know you know what a retaining wall is...and that Amy has knowledge of brick-things...Mom's ranch is in need of a retaining wall for one of the arenas...She'll put you to work if you're not careful (as Sheri found out!)

EVERYTHING was great yesterday by-the-way. Also, on the panni sands how does basil cook up in them? Does it get too black?

Basil cooks up great in panini. It doesn't turn black, just wilts with the heat.
